Egg White Veggie Quiche Cup Thingys

Hello and Happy Tuesday lovers!!  Today was day two at my new job and day two of insanity.  Both were just that!!  Work was mind-boggling.  Just when I think I have a firm grasp of learning something, I get bombarded with a ton of information I don’t understand.  I seriously felt like I was hit with Hermione’s Bombardo spell from Harry Potter.

Ok, that’s a little dramatic.  And possibly not the right spell…but I digress.

Insanity was also, well, insane.  It was a cardio/sculpt day.  I was sweatin up a storm and my legs were shakin like bacon when I was done!  But just like yesterday I was pretty proud I was able to accomplish all of it with only a few breaks!!

I wont go on and on today…mainly because I am exhausted and have to get to sleep soon for another day at the new J-O-B…hopefully it wont be as stressful where I wish for a spontaneous combustion to occur.  Like one of my best girlfriends S reassured me today- I cant expect to move mountains, and I will learn and conquer this new challenge!  I just have to be patient and ask lots of questions!

On to a new recipe for you!  I saw this on Pinterest and decided to change it up a bit with what I had on hand.

Clean Egg White Quiche Cups adapted from Oxygen Magazine

Makes 12 little egg cups!

Ingredients:

  • Oil spray
  • 1/2 cup shredded carrots
  • 1/2 cup Asian slaw (shredded cabbage, lettuce, celery)
  • 12 egg whites (and leftover egg whites in carton)
  • 3 whole eggs
  • Seasonings to taste (I used a combo of garlic/pepper seasoning and dried thyme), no salt added.
  • Dash sea salt and pepper to taste (use any combo of spices you like!  I try to keep my salt intake in check, so you can add salt

Directions:

  1. Preheat oven to 375 degrees.  Spray muffin tins with non-stick spray, or if using liners spray those too!  (trust me, I have to rip the paper of mine!)
  2. Combine shredded veggies in a big bowl. Fill each muffin tin 2/3 full with veggie mixture.
  3. Whisk eggs and seasonings in a large mixing bowl.
  4. Fill each cup with a 1/3 cup measuring tool with eggs, which should cover veggies to the top.  Bake for 30 minutes or until the eggs look firm and teeny bit browned.  Let cool and enjoy!  They will stay in the fridge for a week, freezer a few more weeks.  I don’t know how I feel about frozen eggs…

Am I Insane?

Hello lovers and Happy Monday!  Hope you all had a great weekend!  I woke up around 10am Saturday and had a glorious bowl of egg white oatmeal before watching a few hours of tv and napping until 3pm!!

Egg white oatmeal with a dollop of unsweetened apple butter and sprinkle of Natures Path Pumpkin Flax granola. Ah. Maze. Ing.

Later I treated my mom and I to manis and pedis to prepare for my first day on the new job.  I also caught up later that with my best guy friend from high school who was on leave from the Army.  I hadn’t seen him in over 5 years!  He wasn’t in a good place when I saw him last, but this time he was doing so well- he looked great and I could tell he has really turned his life around and I cant wait to see what he does with it!  I rounded out my weekend with some chores and a little insanity.

You misunderstand.  I got the Insanity workout DVDs.

I know, seems I always change up my workouts.  But that’s how you keep from getting bored, right?  I wanted a change.  While I can do written fitness routines (plyo, tabatas, HIIT, etc), I always do my best when I follow someone yelling at me what to do.  I also wanted a big fitness change, so I thought why not?  I got them half price from someone on Craigslist (she apparently had a stroke/heart attack recently hence why she couldn’t use them).  Fortunately they are the correct DVDs (unopened even!) and not some shady bootleg copy.  Yesterday I did the fit test- whew, I was worried for today’s first actual workout after that!  But once I completed it, I was so proud.  I actually did more of it than I thought I would be able to.  I was actually a bit terrified to do day one.  Watching the commercials, seeing everyone in the video lying on the ground gasping for air.  Which I wasn’t at the end.  Don’t get me wrong, I was SHWEATAAAY.  And I was wiped.  But it was a GREAT sweat session and I cannot wait for tomorrow!  And I really really want to do the whole 60 day thing to the best of my ability (I may miss a day or two because of work, vacations, etc).  But I cant wait!

To continue the Insanity of this Monday, not only did I decide to start a new fitness routine but I also started my first day in my new division/unit!  I was pretty nervous and probably just as terrified as I was with insanity, but I knew I was going into a unit with good people and my friends were close by.  I also had their confidence and support so I went into my first day with my head held high.  I spent most of the day reading information being thrown at me, attempting to understand all the new people I met, the projects we work on, and the hardest part- all the new acronyms (we love those in the government).  Its like learning a whole new language!  Needless to say a few full sheets of paper filled with notes, a couple index cards with the acronym definitions, and several email folders later I think I have the teeniest tiniest itty bitty grasp of what I will be working on.  I even sent out my first ‘product’ for higher management to review!  Well, I sat with my ‘supervisor’ and we completed it together, but I sent it… He is also working a big portion of what I will be doing while I work on learning the whole duties of my position.  With so much to do and learn the day really flew by. And the best part?  My phone didn’t ring once!  At my old position I was in a very ‘customer’ oriented position.  I was the main POC for the program and had to answer all the policy/technical/etc questions ALL day by email and phone.  Though my current position has a big email volume, it is all to do with our unit and their products/projects.   I’ve met and made friends with my ‘supervisor’ and a couple people in the unit, and had a chance to visit my old unit, too!  All in all, it was a pretty productive, exciting, and info-filled day!  Thanks again to all my family and friends for all their support and assuaging my fears!!

Well lovers, I am wiped.  It was a mentally (work) and physically (workout) exhausting day and I am SO looking forward to a full night of restful sleep.  On tap for tomorrow- more craziness!  Hopefully I will retain the info I learned today.  And I hope I’m not sore tomorrow.  I need to be in top shape to (finally!) book a cruise to the Mediterranean with one of my best girlfriends!  There is a funny Iceland volcano story I will have to share at a later date.  For now, I leave you with this caahhraaazaaaay photo revelation…

Last Day Sadness And Oatmeal Heaven

Hello lovers!  Sorry it’s been a while since I posted last.  I have been a bit preoccupied with work changes.  I announced in a previous post about my new job and the anxiety with starting a new job.  Well, tomorrow is my last day at my old position.  I have been in this position almost 4 years to the day.  I have to say I have met some of the most amazing people in my job that without I would not be where I am today.  They all individually have helped shaped the woman I am today, and collectively have been the most supportive, generous, and compassionate coworkers that are my closest friends I could ever hope for.  I am truly blessed to have these amazing women in my life and am so incredibly sad to be leaving them.  And although I am very excited for this new challenge, I will definitely miss seeing them every morning, going on our early coffee runs to our cafeteria, frequent runs to froyo, and the ability to run to their desks across the room to rant/cry/laugh at any crazy moments happening at work.  I truly am finding it difficult to believe it will be my last day tomorrow…but I will be just a few floors away 🙂

Ok, with the sappy and tearfulness aside I have to share with you a breakfast I had that was super amazing. I’m pretty sure I have mentioned my love for breakfast foods before.  If not, here’s a visual recap:

Well, replace the toast with oatmeal because I could eat oatmeal everyday.  No lie, every. Single. Day.  I will mix it up by adding different protein options like protein powder, chia seeds (love the gel-texture it added!), nut-butters (almond butter is my lover), and just this morning after reading quite a few posts on it I added egg whites.  Since I don’t have a stove or unlimited time in the morning to make a leisurely breakfast like some (jealous! Im out the door at 6:40am), I brought a little Tupperware of liquid carton egg whites to work with my absolute favorite (and currently out of stock of every flipping store I go into) organic oatmeal.  I shook the little Tupperware to mimic the ‘fork fluffing’ of the egg whites, then cooked the oatmeal in the microwave for about a minute and half.  I then added the foamy egg whites to the oatmeal and zapped it for another couple minutes in the microwave.  Once it was done and fluffy, I stirred in bucket loads of cinnamon like a mad woman.  The final result was gloriously fluffy and voluminous oatmeal.

Today was also a fabulous day today in the Nation’s Capital.  It was a beautiful 68 degrees, sunny, and just amazing.  While my workouts and eating have been less than stellar (minus a fun outside run to the doggy park with my roommie S today after work), and aside from the new-job anxiety and stress, I have been feeling pretty bubbly and happy.  I feel it’s very difficult for me to be continuously happy since losing my father.  Perhaps I’ve reached a new level in my grief journey?

Or is it just the amazing oatmeal breakfast?

Or both?

Whatever it is I hope it continues as I start my new job!  Wish me luck!

Anxiety/New Job, plus The Royal Burpee Challenge!

Hello everyone and Happy Weekend!  I don’t know about you but this week has been crazy long and exhausting!  First things first- I got a new job! Woo!  I will still be working for the same Agency, just as a different position and out of Human Resources.  I’m very excited as I have been trying to get for a couple of years now, but the job economy has been less than stellar.  I am eternally grateful for my time spent where I have been- I have met so many amazing people and made some really great friends.  I am truly sad to be leaving and hope with every fiber of my being that I will remain great friends with a select few.  I wont be moving far- just a couple floors down- so there’s no excuse to not get coffee/lunch/froyo a couple times a week!  While I am excited for a new position with new projects and responsibilities, I am so so so anxious and nervous, too!

I feel ya buddy

I have an unfortunate habit that with every new life challenge I make myself so anxious it literally effects my life.  In middle school I had horrendous stomach pains, in college I would have headaches, and as an adult (as evident all this week when I found out I got the job) I have not been sleeping well at all, even with the help of sleep aids, relaxation techniques, etc.  Hopefully this will end soon when I can convince myself I will be just fine and will conquer this new job with the same vigor as I have my current job!

Today’s workout was a mix of whatever I felt like doing- I barely got 5 hours sleep last night thanks to my anxiety, so I was pretty  exhausted when I got home from work.  I attempted to nap without success, but felt pretty rested anyway.  Here’s what I accomplished on limited sleep:

10 minutes HIIT treadmill warm-up

10 minutes arm and leg weight machines (15 reps/3 sets of 5 machines)

15 minutes Bodyrock tabatas

15 minutes arm workout with free weights plus some ab work

I was a sweaty beast when I finished!  I felt super accomplished I tackled my taxes…and quickly saved and exited out of the program when I didn’t see a big return.  I may ask the tax people tomorrow what the deal is as I had a pretty nice return last year and expected at least nearing that this year.  Stupid tax season!

One last thing-I am FB fitness group friends with the very lovely DC Event Junkie – and I have joined her as well as Hey Love Designs in the Royal Burpee Challenge!  From the website I will be joining in the craziness:

Burpee Madness

“Those who join us in the challenge will start with a single burpee on Feb. 11. On Feb. 12, the second day, we will do two burpees. On Feb. 13, the third day, we will do three burpees. We will continue adding a burpee to our daily workout until June 4, when we will do 115 burpees in honor of what would be Royal H. Burpee’s 115th birthday. Over the course of the challenge, athletes will do a total of 6,670 burpees.”

Over 6500 burpess total?  Yup, I must be crazy!!
